Using a blend of Shuzo Kotekimai (high-grade rice of brewing quality), the “Yamada Nishiki” and “Omachi” grains of rice is polished down to 50%. The chief brewer is proud of this sake, made through a combination of all the best techniques sake brewing has to offer.
